Amaretti Cookies


I've been inspired by my new Italian family (the in-laws) to make these deliciously crisp amaretti cookies that you dip into coffee. What's so amazing about them is that there is NO FLOUR and NO BUTTER at all in this recipe... and believe it or not, they are still delicious! Who knew that cookies could exit without them?!

These cookies are such a treat to have in the morning with your coffee, and they're high in protein and pretty healthy too!

Amaretti Cookies


1 1/4 cup blanched almonds
1/2 cup pine nuts
1/2 cup sugar
2 extra large egg whites
1 tsp almond extract







1. In a food processor, grind the almonds, pine nuts and 1 tbs of the sugar to a fine powder. Set aside.
2. Beat the egg whites with an electric mixer until stiff. Then add the remaining sugar and beat until the egg whites are stiff & shiny.
3. Fold in the ground nuts and almond extract.
4. Spoon the mixture into a pastry bag and pipe onto a baking tray (lined with parchment paper) in small rounds. Place an almond or pine nut in the center of each cookie.
* if you don't have a pastry bag (I don't)... you can use a ziplock bag, and just cut a small bit of one of the corners off... this works really well as a makeshift piping bag (works for icing too!).
Bake at 300 degrees for 25-30 minutes.
