Salade Niçoise ~ My Favourite Supper Salad



I love everything about this salad... the contrast of colours, the heartiness, the fact that it originated in Nice... and of course, all the incredible tastes & textures. This is one satisfying salad!

Salade Niçoise


Ingredients:

1 head of boston lettuce, washed & dried
1 pound green beans, steamed and then rinsed with cold water
1 1/2 Tablespoons minced shallots
1 or 2 ripe tomatoes, cut into wedges
2 potatoes, peeled and cooked, and chopped into bite-size pieces
1 can of chunk tuna (I think Rio Mare, the Italian stuff, is by far the best)
3 hard-boiled eggs, peeled and quartered
1/3 cup black olives
2 tablespoons capers
2 tablespoons minced fresh parsley
Salt & black pepper

dressing:
1/3 cup olive oil
2 Tbs red wine vinegar
2 tsp grainy or dijon mustard
salt & black pepper

Mix the dressing.
Toss lettuce leaves, cooked green beans & potatoes, shallots, tuna, olives, capers, parsley and salad dressing in a large bowl. Add salt & pepper to taste.
Divide onto plates or serving bowls and top with eggs & tomato wedges.
Serve immediately and enjoy!

One of our favorites ~ and I always love adding ahi tuna to it when I can find it really fresh and as local as possible!

I always see tired-looking Salade Nicoise's at delis...nothing as lovely and fresh-looking as yours though. When my fav. farmer at the farmer's market gets tomatoes, I'm SO making this!
