Blue Cheese, Rocket & Caramelized Onion Quiche


Here's a delicious quiche I invented the other day out of random items from my fridge & pantry. And luckily enough, it turned out amazing! I wasn't sure about the blue cheese & eggs combo at first, but it was surprisingly good in the end. I'll definitely be making this again sometime soon.

Blue Cheese, Rocket & Caramelized Onion Quiche

1 pie crust, unbaked. (I use this Pioneer Woman recipe for Perfect Pie Crust)

For the quiche filling....
4 eggs, lightly beaten
1 cup whole milk or cream
1/2 tsp salt
2 cups rocket greens (arugula)
2 onions, sliced
1 Tbs olive oil
Blue cheese, crumbled.  Approx 100g, or more to taste.
pepper to taste

Saute onions in olive oil on med-low heat until slightly browned and caramelized (approx 20 minutes).
Then distribute the onions on the unbaked pie crust. Layer with arugula and crumbled blue cheese, as shown below:


In a bowl, lightly beat eggs and milk. Stir in salt & pepper, and then pour egg mixture over the greens (and almost filling up your pie dish). 
Bake at 375 degrees for 45 minutes to 1 hour, or until quiche is set (and cooked through).
