Green Pancakes with Lime Butter: not your average brunch food!

My lovely cousin made this exquisite brunch for us on her last visit from the UK, and I've been meaning to share it with you for a while now.
This is a very unique and very delicious recipe. Perfect for brunch with foodie friends. They are savoury pancakes (not the typical sweet ones)... and yes, the pancakes are green (from the spinach), but believe me they taste incredible!!

The lime butter is also outrageously good, and the leftover butter tastes amazing on all kinds of veggies (I'm thinking sweet potato... that's some serious yum!).

She served them alongside avocado slices wrapped in smoked salmon... also amazing!

Green Pancakes with Lime Butter
Recipe from Yotam Ottolenghi's Plenty


Lime Butter
100g unsalted butter, at room temperature
grated zest of one lime
1 1/2 tablespoon lime juice
1/4 tsp salt
1/2 tsp white pepper
1/2 garlic clove, minced
1/4 tsp chilli flakes


Savory Pancakes
250 g spinach, washed
110 g flour
1 tablespoon baking powder
1 egg
50g unsalted butter, melted
1/2 tsp ground cumin
150ml milk
6 medium spring onions, sliced
2 fresh green chillies, thinly sliced
1 egg white
oil for frying

First make the butter: mix all lime butter ingredients until well combined. Wrap in plastic wrap, and roll into a sausage-shape. Refrigerate until firm.

Next, wilt the spinach in a pan with a small amount of water. Strain and cool. Then squeeze out any additional moisture. Chop roughly, and set aside.

For the pancake batter: mix flour, baking powder, whole egg, melted butter, salt, cumin, and milk in a bowl until smooth. Mix in spring onions, chillies and spinach.
Beat the egg white to soft peaks, and then fold into batter.

Heat an oiled frying pan over medium-high heat. For each pancake ladle 2 tablespoons of batter into the pan. Cook for approx 2 minutes on each side (until you get a golden-green colour). Continue until all the batter is used up.

Serve a few hot pancakes with a generous slice of lime butter on top. Enjoy (I promise you will!)

That looks incrdible! I love savoury crepes (actually probably more than sweet ones...and that's big coming from someone with a huge sweet tooth) so I'm sure these were fantastic! :o)

Oh my goodness! This looks sooo good! I'm a breakfast person (I can eat pancakes at midnight easily) and this goes above and beyond what I'd normally chow on. Your cousin is awesome!
