I do this recipe all the time as muffins, but I thought I'd try it as a coffee cake this time.
Oh and it was so worth it!
I just love this recipe.
I love that it's filled with carrot & zucchini and yet still tastes so decadent.
I followed the muffin recipe exactly, only I placed all the batter into a well-greased bread pan and baked it until an inserted cake-tester came out clean (approximately 1 hour).
This one is definitely worth trying : )
