My favourite way to eat salmon (other than in sushi)

Baked Spicy Salmon with Lemon-Tahini Sauce


I grew up in a predominantly vegetarian home, so my cooking experience is pretty much limited to tofu & vegetables. No complaints.... but every now and then I do love to eat fish, and until recently I had no idea how to cook it. This recipe is amazingly easy and unbelievably tasty. I use it every time I make salmon... ok it's the only salmon recipe I know, but honestly, it's the only one I need!






Baked Spicy Salmon with Lemon-Tahini Sauce

Ingredients:
2 pieces of fresh salmon
1 Tablespoon ground cumin
1 tsp ground dried coriander
1 tsp sea salt
2 tsp garlic powder
1 tsp ground cayenne pepper
ground black pepper, to taste
Extra virgin olive oil
Fresh coriander leaves for garnish

Tahini sauce:
2 Tablespoons tahini
Juice of half a lemon (or more to taste)
3 Tablespoons water
salt & pepper to taste

1. Rinse the salmon and pat dry with a paper towel
2. Mix the spices together (cumin, garlic powder, coriander, salt, pepper, cayenne)
3. Pour approx 1 Tablespoon of olive oil into a baking dish, and place the salmon pieces skin side down in the dish. Sprinkle/rub in the spice mixture onto the tops of the salmon. Be very generous here, the salmon should be completely covered.
4. Bake uncovered at 400 degrees for 15-20 minutes, less if you are using very thin filets.
5. Mix together the tahini sauce. Add as much water as necessary in order to get a nice consistency. If there is any remaining spice mix, through it in as well ; )
6. Serve fish with rice and tahini sauce, and lots of fresh coriander.
