Arugula & Radicchio Salad, with parmesan and green grapes

This salad was soooooo flavourful, I just had to share it. The pepperiness of the arugula, the bitterness of the radicchio, the saltiness of the parmesan and the sweetness of the grapes, taken all together, tasted incredible.

(adapted and inspired by a Jamie Oliver recipe, from Jamie's Italy... one of my favourite cookbooks)

Mix equal parts of baby arugula and finely chopped radicchio. Add some grated parmesan cheese and a handful of fresh green grapes (sliced in half).
For the dressing, mix olive oil & balsamic vinegar (3:1 proportions), with salt & pepper to taste. Serve immediately, with extra parmesan as garnish.
