Marinated Eggplant with Lemon & Mint


This recipe sooooo good!  
It's a really nice way to use fresh eggplant and it's actually very easy to make. Plus, anything with lemon & mint is delightfully refreshing in the summertime.
If you like eggplant then you definitely have to try this out. If you don't like eggplant, well you should still try this out because I bet you'll change your mind ; )



Marinated Eggplant with Lemon & Mint

2 medium-sized eggplants
olive oil for basting

Marinade:
1/2 Cup olive oil
Juice of 1 lemon
1-2 tsp lemon rind, grated
1-2 tsp sugar
2 Tbs balsamic vinegar
1/4 cup coarsely chopped fresh mint leaves
Sea salt & freshly ground black pepper, to taste

Mix the dressing (except mint) & set aside.
Heat a stove top or outdoor grill pan (a plane frying pan works too, but obviously you won't get the nice dark grill lines). Slice the eggplant thinly along it's long axis. Brush each side with olive oil. Grill each side for approximately 2 minutes. 
Arrange on a platter and poor over marinade. Then sprinkle mint leaves on top. Cover & set aside for at least 30 minutes to allow all the eggplant to absorb all the delicious flavours : )
