Halloween around here: carving the cutest white pumpkin and roasting pumpkin seeds


We've been really getting into the Halloween spirit around here. My boys get spooked pretty easily, so we keep our decorations pretty tame.

Last night we carved pumpkins. I decided to try carving a white pumpkin, which I had never done before. I carved sleepy eyes, and I'm so happy with how it turned out. I think it's absolutely adorable!









And of course, we roasted the pumpkin seeds.

Roasted Pumpkin Seeds

1 1/2 cups fresh pumpkins seeds, washed and dried (I usually rinse mine and dry them on a baking tray overnight and roast the next morning)
2 tsp melted butter or oil of your choice
1 tsp flaky sea salt
cracked fresh pepper

optional: 1 tbsp nutritional yeast flakes

preheat oven to 300 degrees F
toss seeds in butter, salt and pepper.
Roast for 40 minutes.
Once out of the oven, toss with nutritional yeast flakes and allow to cool completely on tray before eating.
